Just click SHIFT-F1, and the Reveal Formatting pane will appear on the right-hand side. Wherever you place your cursor, Reveal Formatting will not only show you how that text is formatted, it will give you hyperlinks to take you straight to the correct menu to fix it. I think you may be correct: If the document contains lots of fields, and your Word preferences are set to highlight fields 'Always', any fields in the document will show with a grey highlight. I always run with my field shading set to 'Always' so I can see where the fields are and thus do not mangle them while editing. There isn't any white highlighting in Word. It was white shading applied with the Borders and Shading dialog box. You are correct that directly applied highlighting doesn't show up on the 'What's This?' Apparently it isn't considered formatting. The shading, though does.
